All the information I have is for individual phones, but I have nothing on how to BE the system administrator. How do I login as the system administrator to change greetings and perform administrator functions?
First of all, there are different locations for each greeting...
and you have to know which greeting you are changing.
The greeting that you are talking about:
-> is it the CCR tree? (is says - press 1 for x, press 2 for y, press 3 for z)
-> is it the Auto Attendant? (welcome to xyz company, if you know the extension of the party dial it anytime)
-> is it the General Mail box?(please leave a message after the beep)
-> is it the receptionist mailbox?(this is the receptionist personal mailbox)
In other words, what does the greeting say, maybe that might help solve this issue.

What happens when you dial 777 on the intercom? If you get Partner mail, then it's a start. Now you just need to find out which one and the admin password. Normally it's 99 for admin access and the password is defaulted to 4321.
Depending on the type of voicemail you have It can be accomplished by calling in to the office and when the main greeting starts playing press **, the administrator mailbox number, the password and the pound key (the administrator password must be changed from 0000). Once in the mailbox press either 9 or 99 at this point you can re record the main greeting.
To enter viocemail administration, press Feature 983. if your system has 2 digit intercom #s your password is 120000 if your system has 3 digit intercom #s your password is 1020000. once you have entered the password you will see 3 selections you can make .use the three soft keys under the display and select AA (auto Attendant). next press greeting and greeting again. next it'll ask for the greeting number your probably working with greeting 1. press record to start and ok when finished. dont forget to save the greeting or it will be deleted if you exit early. hang up when finished
To access the System Administrator Mailbox: 1. Dial into voice mail: From any phone on system dial 150 2. When the system answers, dial [*] + [#] followed by the System Administrator Mailbox number: (# 0 0 ) The system will announce: “Mailbox 15-00”, which is the System Administrator Mailbox number. 3. When requested, enter the System Administrator password. Default = +[#]+. How to program greetings 1. Access the System Administrator Mailbox as described above. The System Administrator Mailbox Menu plays. 2. Press  to access system greetings. The system will prompt you for the greeting number 3. Enter the desired greeting number. For example: 1 = Default Day greeting 2 = Default Night greeting 3 = Default Temporary greeting 4. You will be prompted with the following three choices: Press  to Review. Press  to Record. 1~ you need to know the VM huntgroup number ie; number dialled to access the voicemail system

the system will supply voice prompts to allow you to change system greetings, The superkey is the Blue key on the top left of the set

if you are trying to change AA greetings follow the above just change the VM box number to the one associated with the Auto attendant alternativly you can configure the greeting from the System administration tool under the following ;
Sys Administration menu -> Voice Mail -> System audio files Update
main system greetings can be changed via the administrator mailbox, dial your voicemail huntgroup number, on answer press the * key and supply the admin mailbox number which is usually 999 or 9999 the default pincode is 8642 then follow the voice prompts to change the system greeting.
Unfortunately, Office systems are all controlled by a central system that requires an administrator to make changes such as recording the system answer menu, creating menu systems, etc. This is usually done by the I.T. department or private contractor. It's done in the same manner. You dial the voice mail port from the extension and it should gate into the user's mailbox...if it exists.
By default the extension is 165 or 500, but it could be different.
If they never had working voice mail, they'll probably get the tutorial. If they did and it's someone else's box, you can delete it as an administrator (from 999 not 998) and add it again and it will clear the box and come up as a new user.
Once the box is established from remote or a different extension than their own, they can press #6 *ext at the main greeting to access their mailbox.
