I always use a paperclip and it works like a charm. Just pushing it in and with a little pressure it pops open :)

Tips for a great answer:
Insert the tip of the SIM eject tool or a straightened paper clip into the hole of the SIM card tray on the side of the iPad.
Press the SIM eject tool or paper clip firmly into the hole until the SIM tray ejects.
Remove the SIM card from the tray, if necessary, and place the other SIM card in the tray.
Push the SIM card tray back into the iPad.
