Unfortunately this is no easy task. HBO go is not managed directly like a subscription service such as Netflix. When setting up HBO go on any device, it requires that you log in through your cable provider. This serves as proof that you pay for HBO service, and therefore allows you to access all their digital streaming content. Because you access through your cable provider, there is no real device management option. The only effective way to remove HBO go from a device would be directly on the device(s) in question.
Now, there is a light at the end of the tunnel. Periodically, services like HBO go that use this verification method through cable providers like to refresh that verification to make sure you are still paying for your service. So my suggestion would be to change your online password for your cable provider (the one you use to pay your bill, check email, etc.), and eventually the HBO go app will want the person in question to log in again and they won't be able to.
