Question about Vulcan EF3 Deep Fryer

I have a vulcan deep fryer and when i turn the knob up to 400 max it heat the oil but will cut off if i turn down to 375. the unit has been off. what part is needing to be replaced.

I'm unclear, if it has reached 400 you would expect it to be off at 375, until the temp drops below 375.
If I have misunderstood then apologies.

sounds like your gas valve to me, you need a manometer to test it under gas pressure.

Vulcan Gas Fryer Overheating


I'm confident that the issue is the thermostat. It's the only thing there to regulate temp and from the sound of it, it's not keeping up. The bulbs can gas out and then they're about as useless as an empty soda can as far as temp regulation goes.

The thermostat is out of calibration and the hi-limit may be as well. I could give you instructions on calibrating the thermostat but the hi-limit is not adjustable at all. The hi-limit cuts off the burners and pilot in the event that the unit gets close to the flash point of the cooking oil. It should not cut out until 400-425 so either the fryer is occaisionally getting a lot hotter than you think or the hi-limit has gotten weak due to the erratic operation of the thermostat. I would recommend that you change both the thermostat and the hi-limit.

My fryer will not heat up consistently. If i press the reset button, it heats up. But after heating up to a certain temp it shuts down and stops heating. There is power to the unit, it seems like a problem...


It probably is a problem with the thermostat. The reset button is probably a high limit. The high limit is a safety device to turn the fryer off if the oil gets too hot. Normally they will "trip" somewhere between 375 - 450 degrees F for commercial fryers. I would suggest placing a temperature probe in the oil and see what the oil temp is when it trips. If it trips at a temp below 375, it is a bad high limit. If the thermostat is set at 350 and the temp goes over 400 then the thermostat is bad.

High limit kicks out fryer and pilot light can


Since you've mention the pilot light goes out at 400 degree F, then we are talking a gas Deep Fryer. The deepfryer usually use at 350 degree F for chips or else. Because the oil will start breaking down its quantity of frying very quickly over that temperature. Most people set at 350 degree F. Now we comes back to your problem, First you should have a deep fryer thermometer they espcially made for deep fryer, (You only mention 400 or better ) that make me think you're only guessing. Knowing the temperature is very important, most Hi limit is set at 420 degree F.
To me it seen the Hi Ltd control is working and that is why it cutting out the pilot when it reach its limit but we don't know what temperature that when the hi limit cutting out at.
When you have a thermometer, put it in the cold oil and turn the temperature to 100 degree F to see what the temperature control cutting out at. slowly increase your setting until it cutting out at 350 degree F . If you set at 250 degree F and the thermometer already reaching 350 degreen F then don't go any further , your temperature control is defective and need to be change a new one.
This is only the first step, you still have to check out the Hi ltd control to see how good its condition is,so far your information say it cutting out at 400 or better. But you've to be sure, because it is a safety control. Hope that will help you , God Bless.

I have a ef3 vulcan, when reaches temp, the pilot goes out.


Set the thermostat to 350 degrees,get a thermometer and put it in the oil,when the unit shuts off look at the temp of the oil.If the temp of the oil is higher then the thermostat is bad if not the hi-limit may be.Let me know.

Temperature never reaches 375


Pull the temp knob off and you should see a small screw in the middle of the stem. This is your calibration screw. Turn it about 1/4 turn to increase the temp. If you don't have one, then you may have an element that is out. Can you take the bottom off to see it. Also, there may be a wire that is not making good connection.

On certain models the thermostat at the factory is set at 375 and even though it reads 400 the factory says the unit cannot exceed 400 degrees.If you wanted to go higher you can remove the knob,you will see the stem and inside you will see a little screw.If you hold the stem and turn the screw counterclockwise this will increase the temp.If you turn clockwise it decreases the temp.1/8th turn of the screw equals 30 degrees.If you do this be very careful because if you set it too high the high limit will trip (saftey device) and then youll have a bigger problem.
