I know that there are 3 types of boat trailer rollers, but how do I know which type to use for my boat? My boat is fiberglass by the way.

Since your boat is fiberglass, you can use either rubber rollers or red soft poly rollers. Aluminum boats can use rubber rollers as well as blue hard poly rollers.

What problems or benefits will I get with an aluminium boat hull

Aluminum boats are easier to maintain, will last longer than fiberglass, and are easier to repair. You can also bump into things without causing damage like you would to a fiberglass hull.

The only real advantages to fiberglass are that it looks better due to the gelcoat finish, providing that it is maintained, they also feel more solid in the water due to the extra weight, and they tend to ride better and are quieter than an aluminum hull.

One other consideration is whether you will operate it in fresh water or salt water. Salt water can lead to corrosion problems on an aluminum hull if you leave it in the water. Fiberglass doesn't have that problem, but you can have a problem with blistering if you leave a fiberglass boat in the water for long periods, especially if you don't use a bottom coat of some sort.

If you do opt for an aluminum boat in salt water, just make sure that you spray it down with fresh water and wipe it down with a soft towel whenever you take it out of the water. This is actually a good practice for any boat, aluminum or fiberglass.

The canoe is split on each end and has a hole in the center on the bottom. I was thinking of doing a "stitch & Glue" on the ends then layering fiberglass over the hole in the bottom, layering...

What ever you do, you need to grind down the gelcoat if it has any and get down to some fresh glass, wipe clean with acetone and have your pieces ready cut and ready to stick on, Go front to back and do the middle at the same time, this way you won't need to sand in between coats, just keep laying on the cloth, you will need some 9 oz cloth, about 4 inches wide, boat resin, acetone, rubber gloves, Popsicle sticks, measuring cups, hair paint brushes, the cheap ones, paper paint buckets, etc, staple a plastic sheet down to a piece of plywood, lay out your strips and saturate them with resin, lay them on the patch, inside and out, roll flat with a roller sold at fiberglass supply stores, like boat supplies, Let it set up, and then do some final sanding, you should be all set. I would put about 3 or 4 layers on all the holes. Make sure you measure your resin and hardener exact and make sure it is hot out, and dry if you can, no humidity, no cold weather. Hope this helps.

Difference between acrylic and fiberglass

Acrylic is a solid sheet material that is heated and vacuum formed to the desired shape. It is then reinforced at the back with fiberglass to give it strength. It is a higher-end material, very durable and super easy to clean. Fiberglass is a material that adheres to a mold and then a gelcoat finish is sprayed onto it. The most common material used in tubs and showers and is the most economical. Cast iron tubs are forged and the finish is applied in powder form while the tub is hot causing the finish to melt onto the cast iron. Synthetic tubs are molded and then a gelcoat finish is applied like the fiberglass tubs.
