on an iPad/phone go to settings, then to mail, contacts and calendars. Find your gmail there, open it. At the bottom of the page it says in red letters delete account. Do that. May I suggest that if you are opening another account, that you open it first and that you transfer your contacts and calendar from your gmail account to the new account. Then delete your gmail account.

From time to time net providers ask for information such as passwords, phone numbers, etc. for verification that you are who you say you are.......as a safeguard. Never give out SSNs, bank account numbers, or highly sensitive personal information to anyone.........especially over a phone. Phones are commonly the most hacked devices available. What I'm saying is ...if if makes you unconfortable to give out info of any type...DON'T DO IT...Better safe than sorry.
When you purchased the phone, if you didn't have a gmail account they should have set one up for you. your google account is the same as your gmail address, minus the @gmail.com part. if you don' t have that, you should be able to take the phone where you bought it, and have them hard reset the phone, set up a new gmail account, and tie the phone to that.
