To replace the LVDS cable on a MacBook Pro Unibody, you need to remove the screen assembly and then remove the display glass. (Which normally breaks during removal as it is glued in place).
I recommend taking it to a repairer who is experienced in this procedure as it is easy to damage other parts when doing this.
Testimonial: "Hi Martin, Since posting I found this video: https://www.youtube.com/watch?v=i12cIX13iDQ Around 2:30 it shows how to remove the back cover from the display and indicates you can replace the cable without separating the glass. What do you think of this method?"
I Assumed you had a 'Unibody' MacBook Pro.
The Unibody version has a glass panel that is glued in front of the screen which effectivly seals the assembly. The method in the video is basically correct.
Sorry- I should have mentioned in my original post (although, I had to look online just now to determine which I had!) My macbook pro is indeed not a unibody model. I'll get some more pry tools and have a go at fixing this myself as per the video. Thanks!

NOT a solution -
Are you certain the problem is with the display cable, not with the screen itself? Let's make certain of the etiology before we take it apart.
Good Luck!
Testimonial: "Hi I'm pretty sure. My display occasionally goes pink, similar to what is described in this article: https://discussions.apple.com/message/17907580#17907580"
