Turn the temp to 28 degrees and dispense into a frosted mug, foam will be at a minimum at this temp. Use a thermometer next to the keg and adjust thermostat accordingly, the REAL trick is the frosted mug, it inhibits foam from forming in the mug.

The foam was used for sound dampening. Over time, the foam falls apart and can cause problems inside the machine. If it is coming off, we usually remove it with a razor blade. New foam is not available any more. Hope that answers your question.
