I had the same problem but figured it out. For some dumb reason, Caller ID numbers count against your total phonebook memory. So if you just delete all your Caller ID numbers (press the "Caller ID" button and then the "delete" button) then you'll be able to store new numbers in your phonebook.
If I could get my hands on the Uniden engineer that is responsible for this, I'd smack him! :)

I am just guessing here, but doesn't this phone have the ability to store numbers in multiple categories (ie work, personal, etc)? Read through the instruction book to see how to change categories, and see if your numbers appear then.
