What sort of step down transformer should I buy to use the cuisinart hand blender (US plug), in the UK?

It is actually a step-up transformer you need- from 120v to 220 v.
There are many of these transformers or converters listed on the web. Do a search " 120 v 60 hz to 220 v 60hz converter. "
The critical feature is to have a converter that has a wattage rating equal to or greater than the appliance that is plugged into the converter. It is best to a converter with a higher wattage rating than the appliance beacuse most appliances have a surge of current at initial startup.

Replace power supply

Are you sure the power pack has failed? That should be straightforward and fairly cheap. Note carefully the model and type on the present one, then shop around.

Colinchee, this sounds like a rather complicated electrical engineering issue. Why not buy a coffee grinder in the UK design and rated for your power? It might even be cheaper and the guarantee will cover design flaws. Regards.

How do I convert the electrical wiring to run on

if you mean the plug and receptacle are not compatible then if you have 230 volts just hard wire it in place i.e. omit the plug and receptacle, but beware in the U.K. they are at 50 hz. not 60hz. like in the U.S.A. and if its an electronically operated dryer you may have problems with its operation due to the frequency difference

Need to convert my 110 volt 15amp to 240 volt

You can buy a transformer which allows all 110v power tools to work from a 240v supply. You will also need to change the plug on the compressor to a yellow 110v type. You can buy transformers for around £25 and around £3 for the plug
