You can use it without one but it would be best to install a water softener system like an everpure ql3 head with a 7S0 softener. That might run you about $200 installed.

SOURCE: maximum water supply pressure

About 3 bars, not more that 5 or you will need to install a pressure regulator on the line.

SOURCE: I have a Astoria espresso machine Model AEP12N we have 208 Volts

The machine will use 200 -240 volts, if your voltage is lower than 200 then you will need a booster.

We have an astoria model SAE.2 for some reasen the machine has gone very quiet and appears to be strugling when re charging after each use

It sounds like the water pump is not doing its thing or the machine cannot get water, either blocked filter or water line.

You'll want to back flush the machine with espresso machine cleaning powder:

Salt water running out of machine

Check the silver bullet softener canister, it might have been installed backwards or someone was charging the crystals and did not move the knobs in the correct way. Machine will have to be flushed a few times and softener needs to be charged again.

We need to increase the hot water temperature, how

Depending on the model, if using a manual knob for the tea valve(same kind of setup as the steam) then you will have to turn up the p.stat. If it has an electronic button then remove the front top panel and look on the side of the solenoid you will notice a knob attached to another solenoid called an economiser valve, there should be a plus and minus sign on the knob. Reducing the amount of cold water being mixed with the hot water will increase the temperature.

Need wire diagram for older 3 lever Astoria. Someone hooked up a 3 wire cord for 120v. and the way they hooked up the elements makes no sense or heat. I can't find a model # anywhere butit is older

No the machine is made for 220v. If you check the element closely there will be some markings on it with the voltage.
The other two terminals need to be connected to each other(check diagram below)
The two wires one at the top and the other at the bottom are each connected to one leg of the element, there should be a some kind of bridge connected to the other bolts on element.
Hopefully you can make out this drawing:
T-1 T-2
I
U-1 U-2

Use a 10 gauge copper wire or a bridge terminal and connect T2 and U2.

T is one leg of power for the element and U is the other Leg. If you open the cover on the pressure stat (rectangular box with 4 wires going to it), you will see the wires, two from switch and two to element.
Make sure there is water in the boiler and test machine (connect to power).

Fabric softener not draining during rinse cycle

What type of water hoses are hooked up to it? If you have the flood safe hoses with the check valve in them then there isn't enough water pressure to distribute the softener.
