From the camera screen To change shot modes, tap the square icon and select an option. if the issue is something that started after using the camera in another app, you may have to power cycle the phone. If that fails to fix the issue, you may have to take it to the AT&T store to have it looked at. Or, just reset it to factory defaults.

This will help to reduce the frequency of this issue occurring. I have the same problem and have not yet found a way to remove the Airplane Mode option form the action bar pull-down for the Z998 phone. It is a ZTE firmware issue, not Android.
UNDERSTAND WHAT HAPPENS: when the phone moves slightly away from your ear while talking, the proximity sensor detects that it is not close to your face and it turns the display back on as it should. The screen often comes on with the action bar pulled down and thus all the controls exposed. A moment later your phone touches your ear before the proximity sensor had caused the screen to go blank again, so whatever your ear touches, can become an actual user command, even though unintentional. Unfortunately the Airplane Mode is one of the first selectable options on the Action Bar. You might sometimes notice that Bluetooth, Sound or Mobile Data gets toggle also; at least that does not cause you the dropped call. The problem gets worse when you walk or move around or fidget a lot while talking.
THIS HELPS: manually turn the screen off (press the power button) after you answer the call. Because you deliberately power off the screen, the proximity sensor is bypassed. The job of the proximity sensor is to turn on/off the screen to save battery (the reason of course that when the phone is against your ear, you cannot possibly also look at the screen, hence the proximity sensor turns it off for you). You will soon get in the habit.
