My Bar B Chef grill grates are totally rusted. Are stainless steel grates better or should I stick with cast iron?

I prefer cast iron. Cast iron heats more evenly and retains temperature better. If they are falling apart from rust, junk them. If they just have surface rust and no holes, all you have to do is brush them with a steel brush at high heat. Wipe them off with a wet rag and then rub it with an onion to provide a teflon layer. if it is really heavy rust, spray oven cleaner on them and hose off. After use or for storage, clean them and then wipe them down with a cooking oil soaked rag. The oil will reduce rust build up.

Please help for orion steam cook

Hi Darren: The Orion Steam Cooker website appears to be very useful and also has a Community Forum for exchanging information. You might find the posted instructions and the downloadable manual also to be of assistance.

The online store has replacement parts including grates for sale. However before ordering online I would recommend contacting the company to advise that your purchase was shorted one grate and see if they would be willing to provide. You might also inquire if they still have retailers carrying their product in NZ.

You can contact the company through their website using their webform or write to: support@orioncooker.com

Good luck!

and why do you want to replace it? just use bit of wirebrush, scarape off biggest bits, wipe rest with cooking oil and use as normal.

after cooking wipe clean (do not wash!!!) and use bit of cooking oil again to preserve it.

How to clean and maintain grills after cooking

When you say oil I assume you mean cooking oil. Cooking oil will do nothing to remove rust. If cast iron grate try to re season them. If steel grate use some S.O.S or a soap pad then spray with Pam. Hank

Cooking Time

Google "Smokering" and you will find a lot of forums dedicated to smoking food. It is an art in itself but many of these forums are helpful in learning.

The answer to your question is basically put as many racks of ribs that fit without touching and as long as the temperature is maintained they will all cook at the same time. I typically smoke my ribs at 225 for 4-5 hours.

I lost the charcoal grate and the cooking grate. Where can I buy replacements

Measure the inside of the grill and go to Lowes, Home Depot or any large hardware outlet. They all carry a variety of grill and grates.

I purchased new porcelin coated grates. How do I

My grill uses stainless steel cooking grids, so I had to look it up for cleaning porcelain. Here are a few websites that show you how to clean them. Hope this helps.

This one explains it on the 6th item listed titled: How to Clean Grill Grates.

This one has good overall recommendations for all cooking grid types.

And finally this one can help you as well.

Cooking info

You can print a new manual off of www.chargriller.com. But, the basics are:
1) Take cooking grates off of grill
2) Put enough charcoal on the grill to cover the desired cooking area two coal layers high
3) Pile up desired amount of charcoal (laid out in step 2)
4) Spray lighter fluid all over charcoal pile
5) Light the pile
6) Let the pile burn until the flames die out and most of the coal has turned white
7) Spread the coals back out (use tongs they will be hot). Put any coals that are still black on top of the white ones.
8) Put your cooking grates back on the grill and let the last black coals turn white and the grates heat up.
9) Now cook!
