KitchenaidKsm6573CER1 the shear pin retaining fell out

If you are referring to the pin that holds the stand-lift lever to the stand-lift mechanism, then you'll have to remove the Motor Housing, remove the motor and the three screws below it. Then you'll want to seperate the Column from the Base by removing the three screws at the bottom of the Base. You can then access the lift assembly and all you need to do is reassemble the lever and the plastic hitch (forgot the specific name) to the bar with the spring and nut on the bottom, then secure it in place with your shear pin. (The pin may have to be re-bent into shape with needle-nose pliers, and I also advise putting "Locktite" onto the threads of the six screw that are used to secure the base and column to the lower gearcase.)
I hope this helps!

Top part of mixer is loose. how to tighten?

I had the same problem.. not the top plate, but the whole head was wobbly. I fixed it by removing the top plate, then locating the three screws that hold the top to the base. These screws are under the motor. I had to remove the motor, but this also required taking the transmission cover off. Sounds harder than it really is. Once I tightened those three screws, the play went away.

Mixer head loose

Turn the mixer upside down and you'll see the screws up inside that hold the head to the base. You'll need a long screw driver.

How do you get into the mixer

To gain access to the gear housing you will need a small flat bladed screwdriver and a 15mm A/F hexagon bar (Allen key).
Insert the screwdriver into the small rectangular slot located at the front end of the base plate.
Insert the hexagonal bar into the recess on the base plate.
With the screwdriver, gently release the plastic retaining finger by deflecting it towards the rear of the machine at the same time turning the hexagon bar clockwise to release the bayonet locking mechanism.
The base plate can then be lifted free of the mixer body.
The retaining screw located immediately below the base plate and to the rear of the opening can be removed to enable the motor assembly to be slid rearwards BUT I haven't yet worked out how to disconnect the switch from the motor to enable complete removal.

Can't take apart the body on the mixer

from what i can see you need to remove the mixer head assemble which has a retainer that i havent been able to remove from mine as yet. need a special retainer pliers and you need to remove the rear stand asemble. i have not figured that out yet either. there are no screws under the logo plate. and the screws on the body only loosen the inner assembles, motor and such. this is a tough nut to crack. mine overheats kneading bread and i want to ad a fan.

Trying to take apart the hamilton beach stand mixer to fix it

There should be a few screws on the underside that will allow you to remove the top. You may have to take the head off the base to do this.

Hobart N50

Some of the N50's were packed with a white grease. It tends to seperate. So the oil portion finds it's way out. It sounds like it is getting into the motor case, and is running down the inside of the column. Hobart now uses a brown clay based grease --- Darina 2.

If the amounts are small, and the mixer is not excessively noisy, I wouldn't be concerned. If you wanted to fix it, the transmission would need to be removed, cleaned, and repacked. For a Hobart tech, 3 hours labor, $45 grease, plus parts.

How do I remove and refit a motor to my KM300?

What you need is a service manual which is difficult to get for any Chef regardless of the KM300. Ive got a KM310 model but the user manual is similar to this if it helps:
