basically substitute any non dairy products for milk and then follow the
regular recipe for hot chocolate i.e. heat the 'milk' and add chocolate till it
melts and stir in sugar to taste.
with the sugar amounts as some of the non dairy milks ie soya are quite sweet
You can try using almond or rice milk as well or just buy a non-dairy creamer.

I use almond
milk to make my vanilla ice cubes as I find it gives the best flavor. Combine 2
cups of the almond milk with one third of a cup of sugar. Add the contents of a
whole vanilla bean and bring to the boil.
Once it's simmering, cook it for about ten minutes. When it has cooled
down to room temperature, strain it through a very fine sieve and put it in ice
cube trays to freeze.
