IPhone has had bluetooth since the first model in 2007. With iPhone OS/firmware 3.0 (free for all iPhone users), iPhones are fully A2DP compliant and link with Mazda bluetooth.
My current experience is with a 2010 Mazda3 and iPhone 3GS, where I get phone and iPod functionality via bluetooth (yes, without jailbreaking), though the steering-wheel controls are limited to play/pause and volume only.
Btw...the iPhone does have bluetooth without having to be jailbroken. it's a standard feature.
there are 2 different ways to connect the iPhone to the Mazda 3 2010. One is for using the music system (ipod connect essentially). the second is for the phone. I initially paired my iPod and was wondering why the phone wasnt working. If I remember correctly, you have to follow the instructions in the manual for connecting a phone (using the steering wheel phone controls).
If your phone continues to shut off when connecting...try connecting it to a laptop or some other bluetooth device. If it does it for that then I would take it in for repair. Also, try shutting your bluetooth off, reboot and then turn bluetooth back on...perhaps something is just 'stuck'.

I have a 2011 Mazda 3 5 door and a iphone 4. Both phone and ipod stream through bluetooth after initial pairing is complete. The music was a surprise to me but hitting the aux button on the radio brought up :BT AUDIO on the display. There is about a 4 second delay to the streaming audio but otherwise it works like a charm. Only volume is controlled by the steering wheel controls but you are controling the head unit and not the iphone. There are several aftermarket systems that can bring full control to the ipod/iphone and even display track info on the MID (black and white screen) but I haven't decided to jump to that level (yet),
I had the iphone 4 paired and now the iphone 5 paired with my 2010 mazda 3 no issues. In pandora, the steering wheel controls sound, skip and pause works.

I have a 2010 Mazda 3 hacthback and got an iphone 5 a few days ago. I had an iphone 4 paired to my car with no issues other than no music info showing on the cars screen. Fast forward to the iphone 5 pairing and the screen showed "err" when I tried pairing. I finally took the glove box out and unplugged the bluetooth module for 30 seconds. After plugging it back in, I was able to pair it successfuly. I hope this helps.
Make sure you are on OS 3.0 and are using a iPhone 3G(s)
I have a reasonably new iPhone 3G(s) and for the last few months it's been paired without any problems with the Bluetooth in my Mazda 3. Suddenly yesterday it became unpaired and refused to recognize a device. When I would go to pair the phone it would just keep searching for a device. Finally I read where you could take the fuse panel off of your car, either jiggle the fuse or completely take it out and put it back in (you want the one that controls the audio) and try the pairing process again. Be sure to have the phone's Bluetooth "off" before you try pairing again. I tried several things and FINALLY this worked. Good luck!!
