Need to fix 200 servings of pork loin which will be cut into 1 inch slices. How can I prepare this in roaster to keep moist and hot until serving


Just so happens I am a trade chef. :>)

This is how I would do it.

The day before
Season with salt and pepper, sear the outside to colour the top. Put in a roaster and roast at 350'F for an hour and a half. Leave to cool and refrigerate.

On the day, slice cold (much easier, and put in a tray with a half inch of water. Cover with foil and heat on the top of the stove for 10 minutes, or in the oven for 30 minutes.

The key to getting 200 served is good prep and lots of help. Do as much stuff as you can the day before, prep and blanch veg, make your gravy, peel your potatoes. On the day, you are finishing off and reheating.

Make sure your plates are hot otherwise as soon as the hot food hits it, you lose 30 degrees of heat. If you are fully plating, have two or 3 teams of platers, lay out 10 plates, and have one person do meat, one does potatoes, one does veg, one does gravy from a jug.

If you are doing table service or butler service, you can tray up in advance and cover with clingfilm and foil. Clingfilm holds the moisture and won't burn at 250 if there is foil as well.

Are food warmers dangerous?


Domestic food warmers usually reach a high enough temperature to heat food but not high enough to kill bacteria, therefore creating an idea breeding ground for it.
For this reason it is best to have small quantities of food being served on food warmers at once. The best is to serve it quickly and remove it from the tray as fast as possible. After two hours that the food sits in the warmer it has to be thrown out.
Another danger could be the heated tray and hot water, in case there are childray round, that could get burnt.

What are the different type of plate shapes?


Rim-shaped plates originated in Europe. In the West, food portions are cut into bite-size pieces at the table, and the rim-shaped plate is made with a well that collects the juices that flow from the food.
Coupe-shaped plates have no rim and accommodate the way food is cooked and served in the East. In the East food is cut into bite-size pieces in the kitchen and cooked quickly over high heat.
To allow space for the courses on one plate, the diameter of the coupe-shaped dinner plate is approximately 1 inch larger than that of the rim-shaped dinner plate.

Do picnic baskets come in any other shapes? They seem quite hard to carry if you are walking quite far from your car.


If you don't want to get a traditional picnic basket, you could try a picnic backpack. These are backpacks that are very comfortable to wear on your back but expand in size and can hold plates, cutlery etc in the various sections along with space for the actual food.

What do you use to keep food on a buffet warm?


: If you are using achafing dish (the metal containers buffet food is served in) the best way tokeep it warm is by using Sterno. Sternois a safe, flammable gel that burns at a very low temperature and will stay lit(and keep your food warm) for atleast two hours. It is important to remember to leave atleast2 inches between the top of the Sterno frame and your chafing dish. This will prevent the dish from gettingburned and your food from getting too hot.

Food always gets stuck in the water spray holes pluging them up. It needs a better food filter system. We have a GLD4500N


As recommended most of the dishwashers are not equipped with this filter. But it is always recommended to clear the food off the dish/plates, wash off or wipe and put it for cleaning. The dish washer cleaning is entirely the degreasing/ sterilising of the vessels.
Hence the tip to get your dish washer in good shape is to wipe/wash off the food and load it to the trays inside.
This is my suggestion as we cannot improvise the machine. I hope this helps Good day

Camera plate has lots on play in it. slides and rocks back and forth. very loose.


If it is a manufacturing flaw, contact the company. If the company is unreachable, or you have to pay for a new part and want to save money: try folding a piece of paper and putting it in the mounting tray the plate attaches to. The paper between the plate and the mounting surface will serve to fill the void that the plate is free to move around in. Fold the paper as many times as you have to until it is thick enough to fill the void. Experiment with the best place to put the paper to eliminate play. You may have to put more than one piece in the tray to achieve even results and avoid the camera being cocked when the plate is mounted.
