Question about Cuisinart 17-in Nonstick Cookie Sheet

My bundle of 4 cookie sheets are having a surface problem. The coating is blistering and little metallic pieces are coming off on the cookies I bake.

Throw them out! You do not want that coating to end up in your food, and ultimately youj! Spend the money on some good qualilty cookie sheets, such as stoneware, (my first choice), or heavy steel pans. "Buy quality, and you will only cry once"

Recipe for oatmeal cookies


Oatmeal cookies
Makes 20 cookies 1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
2 teaspoons vanilla extract
1 2/3 cups all-purpose flour
1 teaspoon ground cinnamon
dash of nutmeg (optional)
dash of ginger (optional)
3/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon baking powder
1 1/2 cups quick cooking oats
Preheat oven to 350 degrees F. Line 2 large baking sheets with parchment paper or spray with non stick spray.
In a large bowl with an electric mixer, beat butter and both sugars until fluffy. Mix in egg and vanilla until well blended. Combine flour, cinnamon, nutmeg, ginger, baking soda, salt, baking powder and in a bowl. Stir into butter mixture. Gently stir in oats until well blended.
Shape dough into rounded golfball-sized balls (about 2 Tbsp. each). Place on prepared baking sheet . Flatten with the bottom of a measuring cup dipped in sugar.
Bake for 8-10 minutes. Let cool on baking sheet 5 minutes before removing to rack to cool completely.

Rack to cook meat loaf


My wife takes a cookie cooling rack (with wires) that fits into a cookie sheet with sides; she then covers the cooling rack with aluminum foil and uses a fork or knife and pokes holes in the foil. She then places the meatloaf (or whatever you wish to bake or roast) on the foil covered rack and puts it in the cookie sheet. The holes allows the fat or other juices to run down to the cookie sheet and the meat loaf is not sitting the fat.

I am guessing they were non-stick pans and you sprayed them before using them. This can damage the non-stick surface making it bubble and chip off. If that is not the case, then you may have used a corrosive cleaner on it.

Manual for wearever super shooter cookie press


Instructions hand copied from my old manual
1. Stand motor on flat surface; screw barrel securely into place.
2. Attach flat side of piston onto screw and turn far enough to see 1-2 threads
3. Insert assembled piston/screw in barrel so that notches in piston line up with the ribs in barrel; snap screw into place.
4. Fill barrel with desired mixture, using small amounts at a time and tamping into place with barrel loader; wipe any excess mixture from exterior of barrel
5. Select desired cookie disc or tip; place on filled barrel
6. Attach cap to barrel; tighten securely in place. Note: machine may be operated with barrel partially filled
Note: If cookies do not cut off properly even though dough consistency is correct, make sure the 3 feet of the barrel cap touch the cookie sheet each time in order to form the cookie. As the gun is lifted, the flow of dough is cut, forming the cookie on the sheet.

My baxter rotating tray oven is not baking cookies evenly. The cookies on the outside of the cookie sheet are over-done and the cookies in the middle of the cookie sheet are not done ??


Inside your oven you have an array of louvers or fins in the back left corner and the front right corner. Sometimes a tray will jam and knock one of the louvers out of adjustment. You may need to call a local authorized service provider to come and reset your louvers to the factory settings. In the meantime you can attempt to make small adjustments to see if you can rectify the issue.

Do not ever adjust the louvers in the back left corner of the oven.
For the trays in question, to direct more air towards the center of the cookie sheet slightly bend the louvers in the front right backwards towards the rear of the oven. ONLY MAKE SLIGHT ADJUSTMENTS!! If you bend the louvers too far you will end up burning the center of the cookie sheet and under cooking the edges.

cookie presses come in a wide variety of choices; some are even electric, but there is nothing like a good old-fashioned cookie press for the sheer fun of use and the quality of the end product. The Mirro Cookie Press contains a central cylinder with a screw-on end that holds the cookie extrusion plates and tips for shaping cookies and pastries. On the other end of the cylinder is a cap with a large screw running through the center. On the outside of the cap is a handle for turning the press inside the cylinder. Difficulty: Moderately Easy Instructions Things You'll Need:
  • Recipe and ingredients for cookie dough
  • Soft dishcloth

  • Spatula

  1. Step 1 Wash the cookie press and the plates in hot soapy water. Handle the press carefully to avoid damaging the threaded ends of the cylinder or the screw-on caps. Dry all parts thoroughly with a soft dishcloth.
  2. Step 2 Screw the pressure plate all the way inside the top cap and screw it onto the cylinder.
  3. Step 3 Prepare the cookie dough. See links below for recipes or look for any recipe labeled "pressed cookies" (sometimes called "spritz" cookies.) Follow the recipe directions exactly as the right consistency is extremely important when making pressed cookies. The dough should be soft but not crumbly.
  4. Step 4 Fill the cylinder with the dough. At this point, if you realize the dough is too stiff, you might try adding an egg yolk. If the dough is too moist, add more flour a tablespoon at a time.
  5. Step 5 Place the extrusion plate or pastry tip inside the bottom lid and screw it onto the cylinder. Turn the handle until the dough is ready to come out of the extrusion plate or pastry tip.
  6. Step 6 Place the bottom of the cookie press on the baking sheet and turn the handle until enough dough has come out to see the shape of the cookie. Carefully lift the cookie press straight up so as not to smear the dough.
  7. Step 7 Bake according to the instructions for the recipe. Let cookies set on cookie sheet for 3 to 5 minutes before removing with a spatula. Place the cookies on a cooling rack.

Baked cookies are too brown around edges and not done in the center.


Turn the heat down and get an air bake cookie sheet. They have holes in the underside.

Many lets say higher end microwaves use metal trays to improve cooking performance and are often used in conjunction with broilers in the oven cavity. Contrary to popular belief, metal in a microwave is not a problem as you may notice the racks and the cavity itself is metal. Arcing occurs when there are bare metal surfaces adjacent to each other. So a spoon usually won't cause a problem, but a fork will due to the proximity of the forks teeth. If the unit is working properly, just enjoy it.

Cannot bake cookies in my gas oven


First, I would buy an oven thermometer to use in the gas oven to see if the temp you set is what you are getting. Second, Perhaps, you used a different pan or cookie sheet in one vs the other? Also the cookies perhaps should be a little closer together as they bake. A cookie sheet with a lot of uncovered surface will get hotter than one with a bigger load. (ever notice the instructions for biscuits or cinnamon rolls say "sides touching"?, same reasoning. if you put a few rolls on a big sheet or pan, you'll burn the bottoms, gas or electric.) Hope this works for you, when you get happy using the gas, you won't want an electric again.
