your correct the only difference between a regular oven and a convection oven is that it has a fan.when you open the oven door the fan should be spinning to a stop if this is not the case you may have a problem with the fan.

You have a problem with your oven temp. sensor. Remove it and check it at room temp. It should meter out at 1 to 1.1K ohms. If it doesn't replace it.

Oven doesn't get up to temp...stops at 245 burner is lit but not on high...it was suggested it might be the ignighter..is this possible in that the flames are still there???

I doubt its the igniter because the flames are lit. Its more likely the the thermostatic sensor is bad. Sometimes they can just be cleaned with a wire brush when they get full of grease. That sensor controls when the flames go on and off to keep the oven at the proper temp. A bad one could not let the oven get to the proper temp.

It could also be one of the burners isn't lit. Could be clogged up with grease. Pull the lower / broiler draw out and turn on the oven. Stoop down an look to see if all burners are lit. (Please don't touch unless you know what you are doing) but a cautious look might tell you a lot

Viking oven only one burner will light

http://www.vikingrange.com/MEDIA_CustomProductCatalog/m20127_f20254.pdf
Go to this web site. It has a manual on Viking ovens.
Usually, when the set temp is reached, the flame will cycle down to what is called "Minimum Blaze". This is to put heat into the unit at the rate that it leaves the unit. It helps to hold temp rather than cycle off and on. It cycles high when temp goes below set and then cycles down when set temp is reached.

Oven burner seems to have low flame

Check voltage to gas valve in the back of the boiler compartment. It is way in the back on the left hand side, turn on the top burners. If you do not get any volts or only 1 to 5 volts you will need to replace, It is supposed to have 24 volts to operate correctly

Sharp R-1874F Low Convection Temp

We have the 2 service manuals you need to refer to for this model and have uploaded them to our site here and here to help you.

You will need the
free Acrobat Reader to view or print them in case you don't have it.

The manuals have a safety info, disassembly info, troubleshooting chart, test procedures, part numbers, etc.

I would first suspect a bad thermistor, but it should be checked, as well as the line voltage at the outlet, etc.

The best place to order parts for this brand is Encompass (formerly Tritronics). Or you can call them toll-free at 866-779-5835.

We're happy to help you with free advice and we'd appreciate your thoughtful rating of our answer.

Oven not working properly

I just solved this problem with my GE gas range. I waited forever for the oven to warm up. The igniter would glow, light the burner and burn for a minute or so and go out. It would repeat this process till oven reached operating temp, which took forever. Problem is in the igniter. It may be glowing, but it is not letting the gas valve stay open, because it is not hot enough to create resistance in it to keep gas valve open. I had replaced the thermostat thinking it was the problem. The good part about it was I could take it back because my buddy works at supply house. Once the igniter was replaced, the oven fired up and stayed lit till operating temp was reached. It will also hold the oven temp much better. Oh yea, the igniter will stay glowing while the burner is on. Hope this helps.
