New Braunfels Bandera Smoker instructions for use

I have purchased a second hand New Braunfels bandera Smoker here in Queensland, Australia. There was no intructions with it and the people that it was purchased from also did not use it or know much about it. It is very different to smokers we have here in Australia, but i am keen to get it going. Any assistance would be grateful. Email address is aigawebb@optusnet.com.au

I have that same smoker. it is very easy to use u just have the fire box waterpan,smokehouse,racks and air vents. i start out with a little pile of wood(apple,cherry,oak,hickory,mesquite)and some newspaper to get the fire started. then u fill your water pan about a third of the way. close it up and get it to the right temp depending on what u r cooking. the key is getting good ventilation to make sure your meat is not over smoked. then just monitor your temp till your meat is done. anymore questions email me at rvguy22@yahoo.com

Highly recommend registering and getting the Bandara 101 doc from: http://www.bbq-brethren.com

Lots of suggestions and guys that know there stuff. I added a baffle to my bandara by with just a piece HVAC duct. Very simple inverted V shape attached using the existing bolts that hole the firebox to the smoke box. Helps a lot to prevent over cooking on the rightside. I also got other ideas like lining the boxes with split fire brick which makes the bandara hold heat move evenly.

I have this smoker too!!! i LOVE it. you can see some of my pics on http://www.myspace.com/islandbear73.

If you notice i placed a cookie sheet near the opening of the fire box to help with heat control in the smoke chamber. If you do this make sure it is NOT the kind that has a non-stick coating!!!! and have it upside down to prevent grease from accumulating on the sheet because the can cause a fire hazard. i flattened it and shaped it to channel grease and drippings into the waterpan.

with the leftover expanded steel i used to make the extra grill i bent into a U-shape to act as a fuel basket in the firebox. this helped contain my fuel to burn longer and more efficiently. make sure it is not sitting on the bottom of the firebox so it has room to breathe and access for a fireplace shovel to scoop out excess ash during long cooking sessions (this is important if you choose to use briquettes because the leave behind a lot of ash). unfortunately this causes me to add more fuel from the top not the side (a small price to pay).

Where can I find parts for my New Braunfels Smoker #4800 Black Diamond Model #99204800?


The New Braunfels Smoker you have is made by the W.C. Bradley Co. The same company that makes Charbroil grills and Zebco fishing equipment. However, they do not list parts or Owner's Manuals for the Braunfels Smoker on any of their websites. As a matter of fact, the search doesn't even recognize the Model #.

So, here's my best advice. Go back to the retailer you purchased your smoker from. See if they have another in stock. If they do, ask them to please make you a copy of the Owners Manual. Most retailers are happy to do this for you.

I have purchased a used upright New Braunfels Smoker and need an instruction manual on how to use it, ie. how much charcoal, cooking times, etc.


fill it almost half way spread it evenly and make sure the coal is fully fired before you but any meat in. If charcoal still burning not fully fire and red do not put any meat in the grill. Cooking will depend on what you cooked and quantity of meat. The more the meat the longer it will take. My suggestion is to keep your eyes on what your cooking and if need to pull the meat out and test it if needs to. By testing the meat here and there paying attention with hands on will give you and idea how your grill works. everyone cook or smoke differently, some like it juicy and other like it juicy/dry or fully cooked. Buying a grill is like having a new girlfriend, you have to get the feel to know that person. Smoking will take a bit longer than standard grilling. Hope that help some..enjoy!

I have a New Braunfels Heavy duty "Oklahoma Joe" wood fired meat smoker. The ash collector trey is rusted out. I need a new ash collector trey. The model number is 04201003


inexpensive solution is to go to any hardware store, buy some sheet metal (thin gauge) and make it yourself, even if you have to buy sheetmetal snips

Need an instruction manual


It sounds like you have an "offset smoker". The fire goes in in the firebox (the small offset box). If you have a rack that fits in the firebox, you can put that in there too and use it to grill.

Go to www.charbroil.com and click on "instruction manuals" and find the manual for the one that looks the most like yours. Char-Broil took over New Braunfels a few years ago.

Once you have it assembled, there are huge resources on the web on how to use it.

Personally I rarely use charcoal, I prefer the taste of cooking with Pecan wood - if you live in Texas you can buy a 50lb bag at Academy for about 10 bucks.

I grill over the firebox part directly (although I often close all the dampers and let the meat smoke a little while cooking). A few times a year I'll smoke a turkey or other meat in the main chamber, keeping the fire in teh firebox.
