Thanks for the great question. While I am a avid smoker and outdoors men I can tell you that most of these gauges are not real accurate and only measure ambient air temp. Also the placement of the gauges in the upper portion of the smokers will give a higher reading because heat rises. My best suggestion is that you use a stand alone meat thermometer for guaranteed great smoked meats. You can also measure the temp inside the smoker using a stand alone thermometer and read your guage at the same time. Than you can use adjust the door thermometer by turning the center of the probe on the back with a pair of plier. You should see a nut head or a locking nut that allows you to hold while you turn the face of the thermometer to recalculate it. Some of these may not be adjustable and you can purchase a adjustable replacement online. I hope this has given you a better perscpective on these gauges and will help solve you problem.
It best to cover the smoker after it has completely cooled, if you're going to leave it outside. Make sure the electric cord is unplugged before covering it. Masterbuilt does have a cover available on their website.
I experienced the same problem. My heating element was not working. After a Continuity Test, the Heating Coil was dead and needs replacement. I asked Masterbuilt if any heating coil replacement parts were available. They said "no", but they could offer a discounted sale on a new Smoker for about $175.00. I am still looking. A local appliance dealer said the internet was the most likely place to find one. After looking on the internet, I can't seem to find one yet. If you know of any, please let me know.
