Sanned a document that was created in Windows Excel and unable to modify the text on the scanned document.

Is it possible to modify the test on the scanned Epson document?

It sounds like you have scanned it as an image or a PDF.
If you want to edi it you will need to OCR the image (effectivly this means read it and convert it to text)
