Continuous humming Noise in record mode

When listening to an LP using EZ Vinyl Converter and routing the output through my Stereo system the sound is good.
However when I try to record I get a continuous, not very loud but irritating humming noise both through the speakers and on the recorded file.

Any ideas

3 things to check: First, do you have the turntable grounded to the Stereo receiver, if not, make sure you do. Second, what kind of Audio cable interconnects the two pieces of electronics? Should be a very good balanced cable like Monster ILN or Phoenix Gold, or ProFlex. That alone can cause major noise. Third, Are you using a good power/line conditioning surge? Panamax, Furman,Monster all make very good line conditioning surge units. You've got an AC humm, it can be caused by just about anything in your home from a bad light bulb to a loose common wire in any AC outlet. LP's will amplify any kind of noise that's not heard on other devices. Chances are if you tune your receiver to AM you will hear it as well. Hope this helps.

The EZ Vinyl/Tape Converter software seems to have caused a conflict in the audio codec. I can hear the music on vinyl as it records, but now I can't hear iTunes or web sounds. All my settings for volume...

It is probably too late to help you, but others might have this problem and we solved the issue by disabling and enabling.
Click on windows button (bottom left hand corner), control panel - sound - Playback tab
You will find that there are a number of different speaker setups in that area. One set will have the light meter moving, but there won't be sound from your speakers. This is because the modern computer is much more like an amp and has the ability to have different speaker combinations and settings. You only use one speaker set-up.
- double click on a speaker option, advanced tab, and test. If there is no sound, then your speakers aren't connected to that port. Move to the next one.
- Once you find the correct speaker setup for your system, then disable the previous setup and ensure this one is enabled. Once the meter bar lights up for the right speaker combo, all sound will work as expected on your computer.

The modern computer is much like a stereo amp now, and you have to tell it which set to use. (For some reason it works well enough, until you start adding stereo components onto your system.)

Presuming you're on a Mac:
System Preferences -> Sound -> Input
Select "USB Audio CODEC"

Repeat all your recording you've done thus far. Worked here.

No sound from iTunes audio files

it sounds like EZ A C did not get the audio or EZ put it in a format tha Itunes Cant play. download VLC media player and install it. open the file with VLC and se if it will play it. It will play just about anything it has most of the codex's need to play anything too. if it doesent play it then something is wrong with the input to EZ A C you might have the input muted.

Downloaded songs appear in iTunes library but won't play on comp

I had exactly the same problem and followed the OP's solution, which worked, but I couldn't hear the track as it was being recorded.  So I tweaked the solution.  If you do the following, you don't have to keep changing System Preferences as you switch from record to listening:
Go to System Preferences, press the Sound icon, and click on "Sound Effects."  Then select the drop down menu and select "Play alerts and sound effects through selected sound output device" rather than the USB choice.  Then click on "Output" and select how you want to listen; I used speakers so I selected "Headphones" where the port is "Built-in audio."  Then click on "Input" and select the USB choice.  Now record a track and you can hear it being recorded through your speakers (or headphones).  When it's done recording and after the software transfers it to iTunes, you can play it again through your speakers without going to the preferences panel.
