For simple scientific calculators, you have a certain number of memory locations A, B, C, D, X,Y, M. Maybe more,
To store a value in a memory location you use the [STO] or
[SHIFT] [RCL] (STO) sequence.
15 [STO] A (displays 15)
[RCL] A (displays 15)
For graphing calculator, you have 26 memory locations, one in each letter. You use the STO key to store as above. You may also have the possibility to store programs, and on certain models a text editor.
