draft fans are not usually controlled by any front panel controls , no they work strictly by temperature , they keep going till oven cools off then shut down , now if it never stops even if oven is ice cold , then the control that feeds fan is defective and needs service
Cooling fan has the function to protect kitchen furniture from excessive temperature. The fan will cool the oven even you turn it off (not unplug from wall socket). This will happen only after the temperature decreasing below 70 degrees. If this does not happen then is faulty thermal cut-out which is located between wiring on the top and has 4 pins.

oven has two fans. the second fan is out of sight and cools the casing. it is operated by a seperate stat. not unusual for it to run for up tohalf hour after switching off. if it runs for an excessive time may be a fault nwith fan stat
