How to freeze mushrooms


To blanch, add mushrooms to steamer basket over boiling water. Steam whole mushrooms 5 minutes, buttons or quarters 3.5 minutes, and slices 3 minutes. Cool mushrooms quickly by placing them in ice water for the same amount of time you steamed them. Strain, then place mushrooms in airtight freezer bags or containers.

Perfect party dips, all made easy in a slow cooker


The best part about a slow cooker is that all you have to do is drop the ingredients in and let them simmer for hours.
Here are some of my favorite dips to make for a get together in my slow cooker.

Spinach and Artichoke - Cook on high for two hours

24 oz. frozen Spinach
2 8 oz. package Cream Cheese
1 cup shredded Parmesan
2 cups Mozzarella
2 14 oz. cans Artichoke Hearts Chopped
1 small Onion diced small
1 Tsp. Garlic Powder
1 Tbs. Horseradish
1 Tsp. Chili Powder

Bacon Cheese Dip - Cook for three hours on high

1 Package Bacon, cooked and chopped
1 16oz Package Cream Cheese
4 Cups Shredded Cheddar Cheese
2 Teaspoons Worcestershire Sauce
1 Teaspoon Hot Sauce
1 Cup Half n Half
1 Teaspoon Minced Onion
1/2 Teaspoon Dry Mustard
Salt to taste


Caramel Apple Pie Dip - Cook for five hours on low
5 cored, skinned and chopped Granny Smith Apples
1 Teaspoon Cinnamon
1 Teaspoon Allspice
1 (14 Oz.) Container Fat-Free Caramel Dip


Buffalo Chicken Dip - Cook for three hours on high, add cheese at the end
1 lb cooked chicken, shredded (can be store bought rotisserie)
8 oz. cream cheese, cubed
1 cup ranch dressing
3/4 cup Frank's Red Hot Wing sauce (The wing sauce is thicker and hotter than the regular)
2 cups shredded cheddar cheese

Can I freeze fresh mushroom


Mushrooms are mostly water and if you freeze them raw, they tend to become mushy. This consistency works okay in soups, casseroles, and stews, but it's not the best result you can achieve. If you prepare the mushrooms first, either using traditional steam blanching or saut?ing, you'll be able to use those mushrooms in more ways in the kitchen.
No matter which method you choose, you'll need to clean mushrooms first. Most cooks avoid washing them, because it tends to make them mushy. Check mushrooms carefully, brushing off any visible dirt. Trim stem ends. To freeze raw mushrooms, individually quick freeze them first on a parchment-lined tray. Once mushrooms are frozen, place them into freezer bags, removing as much air as possible.
If you plan to blanch mushrooms using steam, first sort mushrooms by size. This step is necessary because blanching times vary based on mushroom size. If individual mushrooms are larger than an inch across, slice or quarter them. To keep mushrooms from darkening during blanching, soak them for five minutes in a solution of 1 teaspoon lemon juice or 1.5 teaspoons citric acid in 1 pint of water.

Sautee mushrooms about 4 minutes-until they're almost fully cooked. Allow mushrooms to cool, then pack into freezer bags or containers, removing as much air as possible. You can also individually quick freeze saut?ed mushrooms on a parchment-lined tray before packing into freezer containers.
Saut?eing mushrooms before freezing produces a firmer product after freezing. Use these mushrooms in ways similar to steamed mushrooms-adding to quiche, stir fries, pizza, or pasta dishes. For best flavor, use saut?ed frozen mushrooms within nine months.

Can I freeze hors d' oeuvres with cream cheese wrapped in flour tortillas?


I would say "yes".
Things that don't freeze well, according to Deborah Taylor-Hough, author of Frozen Assets: Lite & Easy (Champion Press, 2001), are egg-, milk- or cream-based sauces, instant rice, raw salad ingredients, dishes with dried toppings (store the toppings separately), mayonnaise unless it's mixed in and used as part of a sauce, cottage cheese, hard-cooked eggs and fried foods, which will lose their crispness.

Freezing sauces


Sure!
I make sauces (and soups) all the time, get them to room temp, and then pour or scoop into gallon ziploc bags (or whatever size you choose). Label/date them with a sharpie, and put them (one or two) flat on a cookie sheet in the freezer until solid. They are then easily and neatly stackable in the freezer. I tend to stand them zipper-side-up for easy access.
Yum... Gotta love having sauces on hand!

More ziploc freezing...
1) Whenever I make mashed or whipped potatoes, I tend to make extra, and freeze it to thicken sauces and soups. Just open the ziploc, cut out a couple scoops with a spoon, so as not to slice the bag, rezip the bag and put back in freezer.
2) I also freeze some cookie doughs in ziplocs. They are chewier after being frozen (especially choc chip cookie dough).

How to make stickytoffee pudding


Ingredients For the pudding For the toffee sauce Preparation method
  1. Preheat the oven to 180C/370F/Gas 4.
  2. Mix the dates, bicarbonate of soda and the water together in a bowl and leave to soak for ten minutes.
  3. In a clean bowl, cream the butter and sugar together until light and fluffy.

  3. Still stirring, gradually add the flour, then add the date mixture.

  5. To make the sauce, melt the butter in a thick bottomed pan over a medium heat.
  6. Add the brown sugar, vanilla pod and cream and stir well. Simmer for five minutes.
  7. To serve, spoon out a portion of the pudding onto a plate and pour over the hot toffee sauce.
