The easiest way to put on or take off a tire is to release the break cable. Bikes nowadays have a quick release for the break cables and that will release the pressure on the break pads.

They don't break out garden variety bikes. As a bike is just a static frame with a bunch of aftermarket stuff thrown on it, generic manuals work well. Try one that fits, say, where it was bought.
Use a Search Engine for specific questions like adjusting brakes or shifting and you will find many videos.
