The fuse gear may have failed, if it has your beater will also not drive properly. I'm not familiar with a grater on your model.

My D300T motor is turning but shaft is not. How do I open the shaft area.

Weird sound usually means something in the gear box. I found a copy of the manual which includes many exploded drawings; perhaps something in here might help:

I can't get the beater released from the shaft. I did exactly what the book said, push up as far as it goes and turn to the left, but it doesn't seem to go far enough.

Get a copy of the Repair Part List for your model at Kitchenaid.com
Constant pushing of the beater onto the Agitator shaft (40) can cause
it to be pushed in too far into the Planetary (33). With the beater in place,
use a rubber mallet to slightly tap the edges of the beater and push the
shaft out until you can see the retaining clip.
Now you have enough clearance on the shaft to push the beater upward
and twist it to remove it.

Hi
The blender does not attach to any of the two holes for the whisks.
You need to push back the sliding cover in the center, bottom part between and behind where the whiskers attach. This will uncover a third attachment possibility, where you insert the blender and twist it a quarter turn into place.

The planetary mechanism (gear, plate, etc) on my 6Qt. 575Watt KitchenAid seems to have fallen more than a half inch along the main axle leaving a gap between the 'plate' and the bottom of the mixer head....

It appears that retaining ring (7) has snapped. It is the retaining ring which attaches to the drive shaft. Here is the parts diagram:

http://shared.whirlpoolcorp.com/assets/pdfs/literature/Repair%20Part%20List%20-%20W10157992.pdf

From it you can see how to remove the case cover and access the gear train. You may have to replace the shaft if its groove is worn allowing the retaining ring to slip off.

When you say lag and catch up. This may not be a issue. I have seen this with dough and a spiral hooks on all sizes of Hobarts the hook and dough get in a position to push the hook forward and the drive gears catch back up the hook. in fist gear on the 20 quart this is common for sure. but its normal. if you have a real slip from a sheared key it will not take long to where you can hold the planetary shaft with your hand and stop it. another slip that might be possible is if your mixer has the first generation worm shaft gear Assembly. when it is worn out it will slip you. this is the shaft that drives directly off the motor. you can tell if it's first Gen by it has a large spring on it. the tow later versions are all keyed to the shaft no chance to slip unless a key shears.

Head of mixer droops

I just fixed mine this moring!!
Solution:
1- Lift head. In the lifted position you will see the head of an adjusting screw. Turn it to the left say a half turn.
2- Lower head and see if it is still too low. If so, do it again.

I had to turn mine like two plus full turns.
I beleive it goes into a nylon insert so that the threads are cut as the screw is put in the first time. If the screw is too loose, it may be possible that over time the head could slowly drop because of vibration and the screw slowly moving inward again. If that happens, a new nylon insert may be needed (but that is a different story).

There is another screw that may be loose of the head moves too much right and left. I also had that issue. This screw will be seen if you lay the machine on its side and look up the shaft (pedestal) of the base (large empty area the head attaches to). You will see a small screw head (first item up the open part). That set screw holds the unit in position on the hinge pin to stop movement from right and left.
You will find a full service manual in pdf at:
http://www.mendingshed.com/kitaidparts.html

Hope this helps.
