SOURCE: Trouble printing to photo paper
You need to convert to true black and white by discarding the colour info in photoshop - Open the photo you want to convert to black and white. Choose Image > Mode > Grayscale. When asked to discard color info, click OK. Photoshop converts the colors in the image to black, white, and shades of gray. if you keep the colour info, you will get the composite with all 5 ink colours as Jackboy describes, although it will appear black and white on the screen. With colour info removed, only black ink should get used unless there is a problem with the print head - possibly needs deep cleaning. for instructions on how to do this go to; http://www.usa.canon.com/consumer/controller?act=ModelInfoAct&fcategoryid=123&modelid=12804 then under "tech support" select "frequently asked questions" then type "deep printhead cleaning" into the "please ask your question" box. sorry the Canon site doesn't allow me to post a direct link. If you think you will want the photo in colour again later, make sure you save it separately first. hope this helps :)

Try this :
1) Within your application click on FILE and PRINT
2) Depending on the application in use, you may see either "Printer" or "Format for". Ensure your printer name is selected here instead of "Any Printer".
3) Click the up/down arrows next to COPIES and PAGES to see all the available setting options:
A) COPIES AND PAGES
Allows you to select how many copies you want and if you want to print all pages, selected pages or a specific page.
Adjust the way the image is displayed on the media for multiple page printing.
Allows options for when to print a job, such as specific time or to hold the jobs, and the priority of the job to be printed for networked machines.
D) PAPER HANDLING
More page options, such as even or odd pages only, and reverse print order.
Connects to color options managed by the ColorSync Utility.
F) COVER PAGE
Provides the option of including a cover page or not with your prints.
G) PRINT SETTINGS
Select your MEDIA TYPE and INK. You can also create and save CUSTOM SETTINGS through this area.
H) COLOR MANAGEMENT
Adjusts BRIGHTNESS, CONTRAST, SATURATION, and INK balance. Also gives ability to allow COLORSYNC to control all printer colors.
I) EXTENSION SETTINGS
Provides the option for printing on thick paper and envelopes * This option may not be present with all models.
Details settings chosen in other options.
After making the changes appropriate to your set up and print job, click on PRINT.
