as a follow up on our online session....
It may not be an s video connection problem. it may be that your DVD (or video source) is set to a different color system other than what your projector is set to.
In your DVD, try pressing the NTSC/PAL button.

Youll have to run sets of cables from your head unit to the seats, youll prob only need video, power, and ground if the sound will come from your speakers. For the same display on either monitor run to first position then link the 2 monitors.
