Hi- I love this ring but need to be able to swap out the center stone for my mom's .35 emerald diamond. Is it possible to get the setting for the center stone made to fit my diamond?

It is not possible. It's no loss on your part though that ring is a piece of junk. I wouldn't pay more than $2 for it if someone brought it to my store. The fact that I would pay anything is because it probably has $4 worth of silver in it. The CZs have no value.

When you go into ANY jewelry store you see many,many styles and costs of different pieces of jewelry with the stones already set. ask the sales person to show you 2 or more pieces with the same amount of stones, can you see any difference in the flash or color of the stones, next, walk or turn away from the lighted showcase[s] maybe shield from the lites from above too, Now surely you can see the difference. Next ask for a loupe from the sales person hold it up to your eye [1/2 "from eye] bring into focus by moving the piece in or out from the loupe. now you will see the importance of cost comparing from different stores. The lighting plays a major role in displaying of jewelry.
Are you sure it doesn't say HGE? HGE stands for Heavy Gold Electroplate. In other words, it's not solid gold but just plated. To be sure take it to a jeweler and they can tell with a simple test that won't damage the ring. The A in the circle could be a manufacturer's mark.
You have to open your watch, take out stem completely, then take out whole movement and release the stone. I you have steady hands, nimble fingers and a pair of tweezers, you will be able to refit the stone using Superglue.
If this is a Fossil then you need to make sure that the watch is not exposed to a lot of moisture or extreme temperatures or gets banged around too much. Fossil doesnt cover cosmetic damage under their warranty but you can send this to them for repair. If you still have the stones that have fallen out you can have them put back on by a repair shop or you can use a 2 part epoxy and attach them yourself.
