I have a mini red bull fridge...
Open up the compressor area and trace the wiring. The thermostat should be indicated on the wiring diagram, which should be pasted on the cabinet.
It just may not be obvious without a conventional knob, but it will have a thermal sensor tube- usually copper. It might be bonded on a sheetmetal panel inside the fridge. at least one wire to the compressor's mag starter will be attached to that thermostat to interupt power. It would be adjustable with a small flat bladed screwdriver. Clockwise should lower the temperature, and counter clockwise should raise it. To further complicate it that adjustment screw may be under a dab of red paint that used to anchor it.
Put a thermometer in the fridge to monitor the temp. While water will freeze at temps below zero, Sodas will not normally develop ice until below 30 degrees F and and beer will be fine to about 15 degrees F before it freezes.
