The winch pulls in powerfully all the time irregardless of winch lever position.

Bad electrical control system. A kind of voltage regulator. Id try to get a repair manual. Or you may find part numbers in owner's manual if not available, try manualslib.com A starter alternator repair shop may be able to help.

Motorcycle dies when you turn key to turn on lights. Could this be a problem in the wiring, or a bad lighting coil?

My issue with a quad i owned had the same issue. The prior owner added a winch and attached the power wire to the lights. When i turned the lights on it turned off unless i gave it some gas while turning the lights on. I disconnected the winch and i was ok. Is the fuse proper amp, bad ground or any new electrical additions? I would take a meter reader and start checking where the power source comes in and goes out like a regulator.

Spare tire tools

From the owner's manual for that model, see link below also, page 299 of the PDF has a nice picture.

Spare Tire Removal
Fit the jack handle extension over the drive nut. Use the
Lug Wrench to rotate the nut counter clockwise until the
spare is on the ground with enough slack in the cable to
allow to pull the tire out from under the vehicle.
CAUTION!
The winch mechanism is designed for use with the
jack extension tube only. Use of an air wrench or
other power tools is not recommended and can
damage the winch.
When the spare is clear, tilt the retainer at the end of the
cable and pull it through the center of the wheel.
