What jim said is right. plus clean the front vent. take off bottom front panel and clean all the little round holes. also if its dirty inside everything runs hotter(which makes the EC get warm faster) and dirt gets on the little wire(it's about 4" long coming from the main 40 pin connector0 that monitors the EC temp(clean it). sometimes the fan starts to get weak and doesn't cool properly. also, unplug oven, take side panel off and clean it as well. there are vents on it that get clogged. while it's unplugged clean the inside. I use a paint brush and shop van. just be careful not to hit wires or knock wires off. this will all help a bit but that fan will still run a lot anyway.
First aligning the doors on these ovens are a pain. In the service manual there is a whole chapter on doing this process. Contact turbochef and buy a manual for 30 bucks. Second the mag fan should operate for 4 mins after the cook cycle has completed to continue cooling the mags down. If it goes longer than this then the control board chip needs updating or you have a bad mag fan relay.
the problem with f8 like you have said LOW HEAT
, IF the oven does not warm up in time , which is usually 8 min , it goes into f8 fault code
now please check the hi limit button , on the back of the oven , left hand side, bottom corner, if it reset and starts heating, please check bottom element and temp reading IR , IF it rises very quickly and the elemnt is glowing red , please switch off the unit at the power point , you have problem with the solid state relay, if the temp is slowly rising , then you might only have an issue with the hi limit reset button thermostat, FIRST JUST CHECK THE RESET BUTTON
