Well, the symbol for hyphen is the same as for a minus on the keyboard, usually next to the zero. Is that what you mean? Or you want the ASCII code or something?

That's how it's suppose to be. When you press the hyphen (-) you get a hyphen(-) and when you hold shift and press the hyphen(-) you get an underscore(_).
If what you really mean is they are reversed or behaving funny you might have sticky keys on. To turn off sticky keys go in to Control Panel > Ease and Access Center > "Make the keyboard easier to use" and make sure sticky keys is unchecked.

upgrade to word 2010 or word 2013

Go to tools, QuickCrorrect, Format as you go and turn off anything you don't want.
I have the lot turned off.
Any of the things on the Quick correct menus can bog or crash WP.
