Substitution I want to make sugar cookies, and I don't have Cream of Tartar. Can I use Baking powder instead?

Can baking powder be substituted for cream of tartar? If so, will it cause cookies to raise? I want to make sugar cookies that are thin and crisp.


No, it is sometimes used in conjuction with baking powder but not interchangeable. Itvwill cause cookies to rise.

Recipe for oatmeal cookies


Oatmeal cookies
Makes 20 cookies 1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
2 teaspoons vanilla extract
1 2/3 cups all-purpose flour
1 teaspoon ground cinnamon
dash of nutmeg (optional)
dash of ginger (optional)
3/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon baking powder
1 1/2 cups quick cooking oats
Preheat oven to 350 degrees F. Line 2 large baking sheets with parchment paper or spray with non stick spray.
In a large bowl with an electric mixer, beat butter and both sugars until fluffy. Mix in egg and vanilla until well blended. Combine flour, cinnamon, nutmeg, ginger, baking soda, salt, baking powder and in a bowl. Stir into butter mixture. Gently stir in oats until well blended.
Shape dough into rounded golfball-sized balls (about 2 Tbsp. each). Place on prepared baking sheet . Flatten with the bottom of a measuring cup dipped in sugar.
Bake for 8-10 minutes. Let cool on baking sheet 5 minutes before removing to rack to cool completely.

Can you use powder sugar when you are out of gran. sugar.


Not really... Powder sugar has added cornstarch that is normally used as a thickener and will thicken if heated. It is an okay substitute for dusting cookies, donuts and things like that, but other than that *I* don't recommend using it as a substitute.

For beating egg whites - use an equal amount of white vinegar or lemon juice, or omit the cream of tartar entirely

As a leavening agent - replace the baking soda and the cream of tartar in the recipe with baking powder. One teaspoon of baking powder replaces 1/3 tsp of baking soda and 2/3 tsp cream of tartar

How many cups are in a pound of powdered sugar


1 lb. sifted powdered sugar = 4-3/4 cups
1 lb. unsifted powdered sugar = about 4-1/4 cups

Possibly the function of cream of tartar in ice cream making is to stablise egg whites so the ice cream is similar in texture to whipped cream or meringue so you might try "use an equal amount of white vinegar or lemon juice, or omit the cream of tartar entirely". Have fun experimenting !

Substitution cream of tatrtar


That is popular. COT is acidic, so often lemon juice or vinegar is used, in equal amounts teaspoon for teaspoon. Another is baking powder (not baking soda) but use about 1/3 more of it.
