I am trying to delete a design on a new 780 but the LCD screen isn't responding. I've turned the machine off, then unplugged it, plugged it in and turned it on again but no joy.

It sounds like a software problem, Cathy, and that will take probably changing out the control board. However, since the touch screen is asking for calibration, you should try any calibration techniques in the manual for the machine. Hopefully, that will help, but I doubt it. It could be loose connections inside the machine in the wiring, and reconnecting them could help, if they're slightly loose and oxidized, which happens to all copper and silver contacts, in time.
One tech on FixYa explained the recalibration process:

switch on while holding in reverse & pivot buttons. release then press needle stop button. calibration marks will appear. set & restart.

A slow screen response time could indicate the touch screen or logic board is failing -- both are very expensive to replace (more than what you're paying for the machine.) Ask the seller to get a repair estimate from an authorized dealer, and talk to that dealer to be sure you're getting the full picture.
