Probably a damaged wire or connector.
Trace the wires, it may take some time to find the fault but a good autoelectrician will know what to do.

there are plenty of books and u-tube videos to help with getting the correct wire feed settings and voltage and current settings
It all comes down to operators experience and ability to use the welder correctly
You need to put resistors in the connectors to the old units to mimic the circuit resistance, I am sorry but don't know what value/ohms they should be. Try joining a Jag owners forum and asking there
Normally the mechanical timers have only 2 terminals. Active supply in and oven load out. It doesn't matter which wire you put where. If you don't use the timer just join the active supply and the load together and the oven will work.
Take a wedge (plastic preferably) and wedge a bit between the door and roof enough to get hanger/wire inside to activate the power lock mechanism on the door panel. You risk scratching the paint doing this, but it has worked for me in the past, or you can trip the door lock with the wire.
This has happened to me several times, this will take two people, but all you need to do is have one person pull the hood release, while person number 2 pushes down on the hood, and then pulls up...that ought to do the trick
