SOURCE: The damn cakes and muffins

The muffin is controlled by using magnets. Get any magnet and put it on the bottom part of the muffin and the muffin should inflate. If not, you can remove the bottom plate on the bottom and manually remove the plunger inside.

Do Wilton pans take longer for baking than typical recipes call for? My cakes are sinking during cooling even after baking 10-15 longer than recipe calls for.

I am not familiar with Wilton pans, but as a former professional baker, the main reason for cakes sinking, after baking, is under or insufficient baking. The structure of the cake, which is aerated by the baking powder releasing carbon dioxide to "push it up" or by the inclusion of air during the mixing process, (as in egg sponges or madeira cakes,) needs to be fully set to ensure it stays put as the cake cools. If the structure is not fully baked, as the cake cools the raising agents dissipate and the cake collapses.

Collapsing during baking is caused by fundamentally different reasons, usually as a result of unbalanced recipes.

Hope this helps.

I need instructions to put Wilton's 3 tier party stand together

According to Wilton:
You should have 8" plate, 10" plate and 12" plate
Match the sizes with rings and legs on table.
Attach legs to serving rings, twist threaded end securely into housing on each serving ring. Tighten using wrench.
Attach 8 1/4 Serving ring to Center Footed Base Ring -Position serving ring with footed leg out. Line up the other 2 legs with the correct housing on the base ring, the width between housing should be same as that between legs.. Insert end of legs into housing.
Next attach 10 1/4 Serving ring to Base Ring, You will need to move clockwise around base ring to attach this ring. line up legs and insert legs and tighten.
Attach 12 1/4 serving ring to base ring. Insert legs into last pair of housing on the base ring.
Position plates so lip edge rests inside serving ring.

Where can I get a cookie press? My old one just broke after 25 years of using it.

If you are looking for a very simple cookie press, you could try amazon; http://www.amazon.com/Wilton-Cookie-Pro-Ultra-Press/dp/B000I4OJ1E/ref=pd_sim_k_1

But if you want to replace your broken one with something a bit sturdier, take a look at this link:

Can anyone give me some alternative suggestions to having a wedding cake? We are not very conventional and I just want something a bit more fun.

Here are a few funky ideas that you could consider instead of using a traditional cake:

-Cupcakes (you can tier them on a stand just like a wedding cake and can really play with color and themes that way).

-Ice cream

-Mini Desserts

-Dessert shots

-Petit fours
