Most shops will charge you a minimal amount to put it on a diagnostic test. If you have done the work yourself I would suggest pulling the test plug on your catalytic converter and if that increases power it needs to be replaced. good luck!

If the car has had contaminated fuel in then you can just take the fuel pipe off and leave the ignition on the fuel pump will pump the fuel out, if the tank has debris in it then you will most likely have to remove it completely.

Gas tanks have not had drains in a long time, so the best way is to buy a cheap siphon pump at Harbor freight.
If you want to get under the car, you could also just take the fuel filter off, but it would be harder to keep the gas in a container unless you have the car jacked up high enough to get a gas can under.

could be a faulty thermostat for the overheating and a dirty air filter for the fuel consumption

There isn't one. The unit comes in two halves but you can't get in easily. it's a bit like a box within a box with seels. pull out the main feed to the engine or cut the pipe half way down and re-seel. the new plummers stop leak works a treat.
