If you used a meter for the test it could well be faulty , best to test it under load , I use a battery powered trouble light , safer than mains power .
bad cook? lol sorry had to say that temp sensor is probably bad in the oven reading lower than what it should be thinks it is o but reality is 500 so it does not regulate. my guess.
yes i know exactly whats wrong, one of your high accuracy temp sensors will have gone.
these tell the thermo what the sides & top of the oven temp is.
unscrew the oven from the base unit & pull it out, take the top off & you'll see them little round cylinder looking things with 2 wires coming off them(see link for pic) there screwed to the shell. the one that will have gone will no doubt have burn wires, or connections.

Get an oven thermometer and measure the temperature in the oven to determine if it is at the correct temp or not. If not then there is an oven problem possibly the oven temp probe or the oven electronic controller. If the temp is correct then you are doing something wrong as a cook such as oven temp set too high or cooking for too long.
This is cars and trucks but i will endevour to give some sort of answer ,the flame being to high could be caused by a faulty regulator if used from a gas bottle or again the regulator on the gas meter if mains gas ,alternativly the jet that feed the burner has a enlarged hole in the part that you can see with the flames ,well at the bottom of that a jet that injects the gas into the burner which also has air holes in the bottom to mix the gas so look at the burner first and see what you can see in the way of any air holes being blocked with dried fat
Hi. This is a oven temp sensor failure notice. you will need to check the wires leading from the temp sensor to the control. if the wires are in good condition and , the sensor harness is not welded, replace the temp sensor ASAP.
THIS COULD BE SEVERAL THINGS,IF YOU SEE THE IGNITOR ON FOR SOME TIME AND THERE IS NO FIRE THE IGNITOR IS POSSABLY THE WEAK LINK.IF THE OVEN TEMP IS LOW AND IT SHUTS OFF (THE IGNITOR) YOU MAY HAVE A BAD SENSOR OR MAIN PCB. IF THE TEMPERATURE IS OFF BY WITHIN 35 DEGRIES YOU CAN ADJUST IT (CHECK YOUR BOOK)
your oven needs a new ignitor it has to draw 3 amps or more to open the gas valve (just because it glows doesnt mean its good) let me know how you make out
probably the clock not set properly - you have the oven on automatic. switch off at mains, wait 5 mins and set the clock according to the manual.
if the over-temp stat has operated, the oven goes dead
