There is no gas adjustment screw. There is an air ratio adjustment on each burner. Loosen the screw that holds the flame adjuster and turn the stamped metal adjuster until there is no orange portion of the flame visible. Tighten the screw and you're done.

Gas valve knob continues to turn, won't lite pilot, although knob pushes in fine

Replace the knob. There is a groove that the knob uses to put the valve core in the right position.

If wires are crossed will burner work

It depends on which wires are crossed. Switching the wires on a two wire high limit, thermostat, or thermopile will not matter. The wiring on the gas valve must be correct for the fryer to work properly and safely.

I have a Vulcan lg400 propane fryer I have used 4 times at outdoor catering events over the last year yesterday while using it it began what I would call backdrafting. could low propane level in bottle...

It sure did. Never use a gas fryer in low gas pressure for a long time for soot will build up inside the fire tubes.
Check and clean fire tubes, make sure that the flue is not restricted and there should be no air entering the flue.
Regards.

Hi there. Flames rolling back instead of shooting inside the fire tubes can be a result of clogged fire tubes or air entering the flue, also check if there are objects blocking the flue. Regards.

Need to adjust pilot light could you explain how? Thanks

Hi there.
Pilot light on Millivolt Gas Valve can be adjusted by removing the screw (with pilot adj mark) just below the gas valve knob and tightening (to increase pilot flame) or loosening (to decrease pilot flame) the screw inside. However, make sure that the gas pressure is sufficient and the pilot assembly is clean before doing this.
Regards.

Pilot light

On the gas valve there is an adjustment for the pilot it usually is a machine head type screw if you remove it there is a limit adjustment for the pilot under that. It will not be the flat cap type screw and it will not be a black plastic inner screw to adjust, it should be a metal brass screw you adjust. Not trying to throw to much info at you just making sure you get the right screw to adjust the pilot. The flat metal cap cover screw with the black plastic screw underneath is the pressure regulation adjustment, so it is critical not to touch it.

Hope this helps You
