Does the water heater and furnance run on gas and electric?

If the units are in a RV then yes, they both may run on gas and DC (battery power). The furnace requires gas to provide heat and DC power to run the fan. A water heater may be gas or electric, but if gas, it requires gas to heat and DC power to ignite. If the water heater is electric it requires AC power to heat.

I just had my furnace cleaned it is a gas rheem. The service guy said it was overheated because of a#3 tube he said the furnace heat exchange is black. What can be do regarding this

I presume you're talking about a gas furnace, even tho the title says Rheem gas water heater. Either way, it works the same for both.

Any black coloring on the heat exchanger is *not* from overheating. Black is from a sooty flame caused by a mis-adjusted burner. (In fact, a sooty flame is less hot). There is an adjustable "air intake plate" for air to enter the burner where the gas enters the burner. A proper flame is made by adjusting this air opening so the proper gas/air mixture feeds into the burner. If the air vent is closed too much it produces a sooty flame.
The age of the furnace is the most important aspect, and that helpful to determine a likely condition of the heat exchanger and burners. Other than a badly adjusted flame, the main thing to watch for is a badly rusted out heat exchanger. But black does not mean rust.

We just purchased a home with a beckett heater. we cant stop it from heating the house, it is 80 degrees in here and the heater is off! its burning up oil like crazy but we are only in need of the hot...

Terry, most units like yours had a Winter and Summer setting. It should be located on the furnace itself. In the Summer mode, only the water is heated for domestic use and the furnace side of the system is shut down.

The burner lights runs for 2 to 3 seconds then goes out

If you have an older heater I would replace the thermocouple. They tend to burn out, as mine did on my furnace. Relatively easy to replace if you have any home repair skills at all. They can be purchased at any hardware store and come in different lengths. If not have a trained heating expert do it for you.

Every time we put on the central heating our water runs cold

What kind of water heater do you have?
In any case, it sound like a plumber should check out system.

Do you have indirect heater that gets heat from central heating boiler?
Most indirect/boiler combo heaters have control that is set to heat the water first.
If water is not getting heated, then the control needs repair.

Do you have gas water heater with gas central heating?
The central heater may be drawing so much gas from meter, that other gas appliances are unable to function. larger gas meter or gas line may be needed.
Or if furnace and water heater vent on same chimney, the backflow from central heat could be affecting burner on water heater especially if water heater has electronic sensor that stop combustion if air quality is bad. Venting problems can lead to CO poisoning, and are a serious matter.

No digital readout on home thermostat. No backlight either.

Turn the Furnace off, Disconnect the R and W thermostat wire from the control board located usually in lower compartment of furnace, the blower
is usually mounted behind it.

Make sure the 2 wires you disconnect are going to
R(usually power) and W(usually Heat) other terminal
markings are y(for cool) g(for fan). After Disconnecting the R and W wires Turn the furnace
back on. You will probably have to hold a door switch
in to complete the circuit. If everything is correct the
furnace should not run.

This is more than likely that you have the R and W
wires touching eachother and you need to get them seperated.

I dont think its your thermostat. The 8000 pro series is relatively new. I think is you furnace you lost 24 Volt power. Check the furnace out first. www.fastacservice.com
