Sounds like a bent shift fork. While accelerating you can feel the power cutting in and out quickly. The problem will get worse if you keep pushing 2nd gear till it slips. You can learn where (at what RPM) it wants to jump out and start shifting before it jumps out. The long term fix is opening the transmission and fixing the bent shift fork.

I don't have a 5th gear on my 2004 Yamaha Vstar 1100 Classic!

If you mean the engine just revs and there is no drive, maybe it has a gear selector issue. The 5th gear is like an overdrive.
I would take it to a Yamaha repair shop for advice.

My v star 1100 clutch is stuck and won't release.

Push start the bike in gear. accelerate to about 10mph. Slam on rear brake hard. Try a few times as necessary.

Hard to start when hot

Turn off fuel petcock before you shut down bike. Let idle for a couple minutes. When you restart leave fuel petcock off until it fires. This works for me when its really hot outside. 2007 VSTAR 1100 classic.
