I have a Cecilware Commercial Electric Deepfryer SN661044. All of the apropriate lights come on but the contactors are not energising
That is probably a bad heating element.
to test the heating element you use a Multimeter . Set the multimeter on ohms (impedance) and touch the two contacts of the element with the multimeter probes. If there is no continuity (impedance infinite) then the element must be replaced.
If the element is fine, try replacing the temperature sensor, that is more difficult to test , if still no luck , control board is bad.

Sounds like a connection inside the unit is broken. I actually had this happen on our deep fryer not too long ago (small world). Anyway, unplug the unit and start taking it apart if you have any electronic expertise (even if you don't, it isn't dangerous as long as you have it unplugged). Be looking for any broken contact or wire (one may just be loose or disconnected). Start at the heating coils and work to the power outlet following the wire. Let me know if you have any concerns while doing this or need anything else. When you find the broken contact, I can help you figure out what to do but its usually pretty simple.
