To be honest for the work involved it would be easier to just swap out the 1600cc engine for a complete 1800cc engine. Engine cc can be set by different things. Piston bore, piston stroke, connecting rod length and so on. 1800cc pistons might simply be the wrong size for the cylinder bore.

That sounds like hard work? Back along I fitted classic struts to mine. how about modifying escort struts and arms, otherwise triumph spitfire bits are available and they make ford hubs for the kit car market, the spit caliper brackets are sperate to the uprights so might be less to machine. I think the MK1 escort uses the same wheel bearings as an Anglia so the hubs and disks will go straight on.

look on the paperwork for the car and it should give the size and output in kns and bhp.best thing is to remove the clutch then go and get one with the old one in your hand to match it up
