Hello. Here is a wiring diagram for your unit:

http://www.wells-mfg.com/~WELLS/WELLS%20LIBRARY/Wells%20Wir%20Diag/307298.pdf

Check to see that the thermostat clicks at or about just above on, try again the reset, sometimes it is hard to push in all the way. If that does not correct the problem, make sure your power is on, do any indicators light? It could be as simple as a burnt of wire, you will need to check the resistance of the parts to tell any more, thermostat, and hi-limit should read closed (zero). The element should read 4 to 15 ohms each, there are 3 in the tube. The relay coil should be anywhere from 200 to 1200 ohms, the contacts open. I have seen broken wires in the pivot elbow where power comes up the the element head.
Hope that helped, and thank you.

B&S deep fryer heats up to set temp..like 170c, then pilot light turns off.try to relit,no good.if i wait10..20min.I can relit it.but when reach temp, flame goes out again.

The high limit is shutting the fryer off. It is auto reset and that is why the fryer works after waiting. It sounds like the thermostat is not shutting off and the high limit is kicking in. You need to check the actual temperature of the oil.

Fryer turns on heats up and then will not keep temp.

You would be correct in your assessment to check the thermostat.

The pilot is on but the switch won't turn the fryer on. The gas is on but it just wont fire up? Dean Fryer

I can tell you from my own experience with fryers, that they take quite some time to heat up....before lighting.... The probe takes some time to get hot, before it will kick on and light. You normally have to hold the light button on for some time, before the manual fryers will light. I have helped many a customer who cannot seem to get their manual gas fryers to light, and normally it's because they don't hold the light button down long enough. The sensor in there takes alittle time to heat up and it tells the fryer it's time to light. I think people get alittle scaried with gas and just don't hold it down long enough. Try holding that button in longer first, then light it... It should work. If not, call us and we'll try to walk you through it.... Fryer was working before being cleaned but a cook started it up without the oil now nothing will work?

Hopefully it has kicked out on high limit thermostat. It depends a lot ofn what type of control you have on your fryer. If they are all mechanical controls, the high limit may need to be reset. Open the front door of the fryer. There are two thermostat bulbs in the fryer. One goes to the thermostat with the temperature dial, the other to the high limit thermostat. Hopefully the high limit thermostat that you have will have a small red button sticking out. Push that button in and then relight the pilot as you would normally do. If your high limit thermostat does not have a red button it is an automatic reset high limit. When the fryer pot cools below 300 degrees it should reset itself. If you have electronic computer controls on your fryer you will have to reprogram your thermostat settings.

Most likely solution is to replace the reset. If the new reset trips, check the amperage on the elements. At 208V all three phases should be around 47A, 480V around 20A each. Check all wiring connectors for good connections and no evidence of corrosion or overheating.
