Is it Hard to Make Your Own Bread?


Making your own bread sounds like a very labor intensive process. But with the right advice and good recipes, you'll find that it's not as hard as you thought and it tastes so much better than the preservative filled shop bought bread.
Learning to bake bread can be a bit time consuming and it requires several stages in the baking process. But once you become confident, you'll be able to quickly do the steps and work your bread making around your timetable.
  1. The first step involves mixing your basic ingredients (google a basic bread recipe or ask a friend for a recommendation).
  2. Then you need to knead it for around 10 minutes, depending on the kind of loaf you are making.
  3. Then the bread needs to rise in a warm place. The yeast should help the dough to double in size.
  4. Then you punch the dough down to remove the air.
  5. You then shape the bread or rolls and allow them to rise again.
  6. Finally you can bake them.
As I said - there are lots of steps but it's totally worth it.
Freshly baked bread is out of this world.

Gluten free bread


My breville instruction book says that the gluten free bread recipes are all to be done on the 'rapid' setting but that is the breville booklet recipes. I do know the time delay cannot be used. K

Every time I make a loaf of bread it overflows the pan and pushes the lid up. I have followed the recipe in the book that came with the machine. What am i doing wrong?


You're using a fast-acting type of yeast instead of the standard active dry yeast. It's a very common mistake made even more common by the erroneous bread machine recipe writers.

Here are the rules concerning bread machines and the yeasts they love the most:

Use standard active dry yeast for all your standard-rise bread recipes.

For the fast-bake white bread recipes use only fast-acting dry yeast.

Fast-bake type mode selections are available on most newer models and the custom recipes provided in their instruction manuals are the only ones you should use. You should never experiment with recipe ingredients and their portions when using the fast-bake mode on any breadmaker.

P.S. Always refrigerate your yeast with a close eye on the expiration date.

When using grocery-bought bread mixes always substitute the yeast packet provided with fresh active dry yeast. Tip: A packet (or "sachet") of standard active dry yeast contains 2-1/4 teaspoons.

Basic White

1 1/3 cups lukewarm water
2 tablespoons powdered milk
1 1/2 teaspoons salt
1 tablespoon sugar
2 tablespoons butter or margarine
3 3/4 cups white flour
1 teaspoon yeast

1. Measure ingredients in the order listed into Baking Pan.
2. Insert Baking Pan securely into unit; close lid.
3. Select BASIC setting and 2.0 lb. loaf setting. Choose LIGHT or DARK crust setting.
4. Push Start button. There will be a 15-minute preheat delay before mixing begins.
5. The Complete Signal will sound when bread is done.
6. Using pot holders, remove Baking Pan from the unit and carefully turn bread out of Baking Pan. (Mixing paddle may remain in bread. Remove paddle when load if cool.)
7. Allow to cool before slicing.

Time 3:50 hours

100% Whole Wheat

1 1/2 cups lukewarm water
2 tablespoons powered milk
1 1/2 teaspoons salt
2 tablespoons honey
2 tablespoons molasses
2 tablespoons butter or margarine
3 3/4 cups whole wheat flour
1 3/4 teaspoons yeast

3. Select GRAIN setting and 1.5lb. loaf setting.

Hi, the recipe says bake at "White" the model


Use program #1 if you are using a recipe that contains regular bread flour. If using a combination of bread flour and whole wheat flour and whole wheat is 50% or more of the flour mix use the whole wheat program. Your manual will tell you which program # is the whole wheat one.

some times / hard and dry problems relate to mixture . more mosture . ( liquid's ) needed in mix .. time / tempt/ and altude . / all things needed for good baking . google your bread and type . as there is much info for this .. **** ..

Oster 5838 and a good banana nut bread recipe

I just got a Sunbeam 5895 at a garage sale - it works great - just wanted a different "shape" loaf! I'm going to use this recipe in my Sunbeam - don't see why it won't work! Here's the recipe! 1/2 cup softened butter, cut into small pieces for good blending 1 cup mashed ripe banana (personal note: if my ripe bananas don't measure up to 1 cup, I add enough milk to make it 1 cup. Seems to be okay) 2 eggs, large, slightly beaten 1/2 cup chopped nuts (optional) 2 cups all purpose flour 3/4 cup sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt Grease inside of pan and knead bar generously with vegetable shortening (I just spray with Pan Spray). All all ingredients in order listed above to pan. Lock pan into bread machine. Program for quick bread. After a few minutes of mixing, I usually take a rubber spatula and scrape down the sides and stir in any flour that has not been completely mixed. I didn't do this once and ended up with a loaf that had flour coated corners! Good Luck! Enjoy! Just follow the above recipe but if your using the Oster 5838 expressbake put the setting at expressbake 80min. It works flawlessly, also with the oster 5838 expressbake you don't need to use the rubber spatula to mix after a minute because it blends everything together nicely. Thanks bobert.

Here's a good basic white bread recipe that works great with a BD2550 (and usually doesn't even **** the mixing blade into the bottom of the machine

1 cup warm (not hot) water
1/3 cup milk
1 tablespoon sugar
1 teaspoon salt
1 1/4 tablespoons butter/margarine
4 cups flour
1 teaspoon yeast

Heat the water and add the milk to it. Dissolve the sugar and salt into this mix and pour the liquid into the bottom of the bread maker bucket (make sure the mixing blade is already in). Melt and add the butter to this mix. Add the 4 cups of flour directly on top, but do not mix it in. The flour will float on top of the liquid. Make a small dimple in the top of the flour in the middle with your finger and add the yeast into that little crater (at no point while adding ingredients do you let the yeast touch the liquid). Set the bread maker for basic setting 1, light crust, 2lb loaf and let it do it's thing. 3 hours later, you'll have a nice loaf of white bread with good consistency and density, and it usually leaves the mixing blade in the bucket (rather than having to dig it out of the loaf after).
