Look at the link attached, the defrost t-stat is #38 (thermo bimetal). Clips to the coil, looks like a round device with wires on it. Defrost t-stat is normally closed to allow power to the heat element and opens when hot enough to stop the defrost cycle. Heat element #43 should not test "open" with a multi meter, there should be some Ohm value there to show it's good. There is no forced defrost entry for your refrig. Yours has a ADC board in the upper right corner of the control area in the refrig section. The only way to initate defrost is jump the terminals on the board. Look at the wiring diagram closely before making the jump. The board energizes the heater thru the neutral side so make sure you dont jump line to this. I believe you jump L2 to Def

Defrosr heater is located behind the back wall of the freezer section. You will have to remove the shelves and ice maker if you have one installed. A number of screws secures the back wall in place. Remove the screws and the back wall should pivot out from the top.
The defrost thermostat is located behind this wall and is secured by a clip to the coil. To test this defrost switch you must lower its temperature below 16°F.

Side by side have two compressors which are sometimes seperately controlled. The defrost timer is normally a part of a printed circuit board and not a serviceable item. The defrost bi-metal thermostat would be found on the freezer side behind a cover panel and is attached directly in contact with the evaporator (the thing with fins like a radiator) tubing. The function is to prevent the freezer going into defrost mode until the coil tubing is below -5 degrees celcius.

You could turn off the freezer (set the knob to zero/off) and open the freezer door. After about a minute or two, the fan inside the freezer compartment will turn on to help move air over the coils. Depending on the temp inside your house, it may take a few hours. At least that's how my GE side-by-side works.
Make sure you empty the ice bucket (if so equipped) or it will just melt and drip everywhere.
If it ices over on a regular basis, there may be other problems - the defrost element, defrost timer, defrost temp sensor; or the various other temp sensors in the fresh food compartment and freezer compartment.
