I have a SanDisk 8GB and it works fine on my Mac & my PC. It is formatted for $Windows$ (NTFS) and transferring PDF, JPEG, Photoshop, Quicktime files etc. is no problem.

although your mp3 player may not officially be imac compatible, it should still plug in and be recognized by your imac just fine, you just wont be able to use any software that may or may not come with the mp3 player, however given that its not a zune (microsoft product) and that its not an ipod, it should work perfectly fine, and you should be able to simply drag and drop your music onto the mp3 player when it is recognized by your imac. just be sure to copy the files over to it while its plugged in by using the file browser of your mac.
